This book is intended for all beginners who have an interest in Korean food and culture. It introduces Korean food from the point of view of beginners and includes how, what and the occasion for cooking. Lily considered ingredients that can be purchased at Korean grocery stores or a substitute ingredient that can be found in other countries. In some cases the traditional cooking method was disregarded, but in other cases went to great lengths to ensure Korean tastes. There is taste, health and beauty in Korean food. And additional important aspect is the occasion for the Korean food. The occasion when the food is served enhances the taste of the food. The pursuit of healthy foods is the general trend these days. The concept of healthy food has been the basis of Korean food for several hundred years. This book is composed of three parts to make it more approachable to whoever interested in Korean food.
Part 1 is for beginners, Part 2 introduces foods for Korean traditional festivals and special events.
Part 3 is Korean foods for guests. There is no need to be concerned with overly-luxurious foods and complicated-looking materials. On the contrary, these foods are easier to prepare than others if you have a formulated seasoning. you can enjoy the taste and experience of Korean food that matches your image at your own table.
Part 1. Catch-up on the basics
Ordinary Korean tables consist of rice as the main dish and include side dishes to improve the taste. Soup, stews and Kimchi are basic side dishes and additional Namul (seasoned vegetables) or stir-fry is served as a part of 3~5 side dishes. The main ingredient should not overlap when cooking and spicy and soft foods should be harmonized. Also side dishes should be cooked using different methods and sauces, main ingredients should be balanced between meat, fish and vegetables.
Part 2. Situational table
Koreans long ago lived an agricultural life and based on the calendar. Holiday customs related
with farming include several wishes with the taste of art and to protect the body from accidents.
These traditions persist and the entire nation celebrates and enjoys New Year’s Day and the Korean Thanksgiving Day, or Chuseok. Korean traditional foods depend on the season and occasion. The mood on holidays or special days can be promoted by situational foods.
PART3. Setting the table for guests
This part is composed of a menu and the typical practice for table setting in Korea. This includes many menus well known to foreigners and typical Korean cuisine for guests. There is no need to be concerned with overly-luxurious foods and complicated-looking materials. On the contrary, these foods are easier to prepare than others if you have a formulated seasoning. Cuisine for guests is one-course items, so the menu can be served by exchange.
